The best part of this Aloo Bhaji Grilled Sandwich recipe is its flexibility. You can pair this bhaji with roti, dosa or in a sandwich for a quick breakfast on the go!

Aloo Bhaji : 10 mins
Sandwich: 5 mins
3-4 medium sized potatoes
1 tsp mustard seeds
2 tbsp regular cooking oil
1 tsp cumin (whole)
1/2 tsp Fenugreek Seeds
¼ tsp Asafoetida Powder
1 tsp Turmeric Powder
1 inch ginger
4 Green Chilies
5-6 Cloves of Garlic
Few stems of Coriander leaves
Salt to taste
Chop ginger, coriander and chillies finely. Smash few cloves of garlic and set aside.
In a pot of boiling water, add the potatoes and boil until they are soft and completely cooked.
Set them aside to cool and then start to peel the skins off. (you can even use a pressure cooker to boil the potatoes). Mash the potatoes for a smooth spread or cut into cubes as per your choice.
Heat another pan with cooking oil and add cumin, mustard, fenugreek and asafoetida powder to the hot oil and wait for the seeds to crackle.
Once that is done, add the chopped ginger, garlic and chillis. Fry on low to medium flame until brown in colour.
Add turmeric powder to the pan along with coriander leaves. Mix this masala with the potatoes. Cook for the few minutes and turn off the flame.
It’s not ready to eat with dosa or roti. To go the extra, follow the rest of the steps for a sandwich.
Heat a skillet with a lite butter and spread the aloo bhaji in the form of a pancake. And flip it so it fried on both sides.
Coat the sliced breads with butter and heat on a skillet until they’re nice and toasted.
Apply a generous amount of ketchup and place the aloo bhaji patty in between.
And its ready to eat! Simple and quick breakfast sandwich or snack is done!
If the bhaji is too dry according to you then keep add little water to it to get the texture and consistency that you’re looking for.
